Mark Singson’s enterprise, FAM Inc., was formed from the three pillars that inspire everything he does - Food; Art; Music.

Growing up in Vancouver, Mark has been able to explore, in detail, all three avenues and they have had a profound impact on the culinary creations for which he is celebrated.
At the beginning of his career, Mark had the privilege of working at some Vancouver main-stays such as The Fairmont Pacific Rim, Oakwood, and Boneta, to name a few. Eager to expand his horizons, Mark ventured off to Melbourne, Australia where he worked at Vue De Monde, and Saint Crispin before hosting the first of many Pop-Ups with much success. Upon his return, Mark successfully helped open the acclaimed AnnaLena, which currently sits on the Canada’s 100 Best list of restaurants.

Inspiration comes in many forms for Mark - most often, though, from his Filipino roots, which inspire a multitude of dishes or become fresh takes on traditional dishes. Mark hopes to introduce the ingredients and flavours of his childhood to a wider audience while incorporating modern techniques that create a refined dining experience.

Throughout the last decade, Mark has made it his mission to create dining experiences that push not only the boundaries of flavour and style, but also those of guest interactions. One of the most important aspects that guide all of Mark’s events is the focus on the family unit. Mark’s dishes - combining both comfort and elegance - bring all those who partake, together and create a harmonious environment.
